An anaerobic natural from Finca Casa de Piedra in Tarrazú, Costa Rica – a family-run project founded in 2013 by father-and-daughter team Gerardo and Jennifer Arias, drawing on over 30 years of experience. Grown at 1,500–1,800 m.a.s.l.
The cherries are first pre-dried before being sealed for extended fermentation in carefully controlled conditions, then slowly dried on raised beds for around 30 days. The result is a sweet, layered cup of toffee apple, brown sugar and vanilla syrup.
